USDA's Food Safety and Inspection Service announced Monday the availability of the compliance guide for mobile slaughter units - self-contained slaughter facilities that can travel to various locations. The Compliance Guide, which will be posted at www.fsis.usda.gov, is intended for owners and managers of a new or current red meat or poultry mobile slaughter unit who want their unit to be inspected and operate in accordance with FSIS regulations. The guide provides recommendations but isn't a regulatory requirement.
Deputy Undersecretary for Food Safety Jerold Mande says USDA is excited to offer this help to small producers and encourages establishments who own or manage mobile slaughter units to use this guidance document to help meet food safety regulatory requirements. Mande says food must be safe no matter where it's produced and FSIS has worked with mobile unit operators to develop inspection procedures tailored to their needs.
FSIS is looking for comments about the compliance guide and will accept comments from May 25 until July 26.
